Spicy Lentil and Coconut Soup

Lentils come in many different colors, but my favourite ones to cook with are red lentils. they cook rather quickly and can easily thicken any sauce or soup with their creamy texture and subtle flavour.

The health benefits of lentils are endless. They are a high source of protein, full of dietary fibre, folate, and iron.  Lentils also have a low-glycemic index, which means that they release their energy slowly making you feel fuller longer.

These tiny legumes are sometimes eaten superstitiously on New Years Eve by people wishing to be prosperous with money in the new year, but today I will eat them because they’re tasty and they’re good for you, simple as that!

So in honor of our little friend I decided to try out a recipe by chef Marcus Samuelsson, and I have to say it turned out way better than I had expected! It’s the perfect soup for cold weather. The spices heat you up and the richness of it is so wonderfully comforting.
